The technology describes a process for the manufacture of chitin and chitin-glucan complexes from chitin-rich biomaterials such as mycelium of microfungi and/or exoskeletons of crustaceans. It uses compressed, hot, liquid water at temperatures and pressures below the critical point of water, called subcritical water, is a process of higher efficiency and the product obtained presents a proportion of chitin between 19% and 55%.
